Born and raised in Arizona, Chef Tommy happily come back to his hometown to start, own, and operate one of the fastest growing food truck experiences in Arizona. He has also led Aioli brand into the winners’ circle of state & national competitions such as Arizona’s Burger Battle, Phoenix Devoured, and Scottsdale Culinary Classic Events.
Whatever your event is, a food truck can take the worry out of providing food to your guests or add a unique twist to a normal day.

Aioli Burger recently made ABC 15’s list of five burgers you must try in Arizona with the truffle burger coming in at #4. Also, our food truck in Phoenix is a regular on ABC 15’s A-List for food trucks in the valley.

The second project of Chef Tom D’Ambrosio, Modern Tortilla prides itself on mixing southwest culinary roots with classical training; we aim to bring you the very best street tacos in the Valley with our food truck in Arizona!
Oak Wood Fired Pizza Oakwood Fire Pizza was started by Chopped Champion Chef Tommy D’Ambrosio and Kyle Hollenbeck both co owners of Aioli Gourmet Burgers and Catering and Modern Tortilla. Both Kyle and Tom have had a passion for pizza due to Tommy’s Italian upbringing and Kyle’s family being from Chicago. Chef Tommy has been making pizzas with his family since he was a young boy. Kyle has strong family ties to Chicago, one of the most popular places to get authentic pizza in the world and has also worked at one of the most popular pizza concepts, La Grande Orange here in the valley.
Super Mac Bros
Super Mac Bros was created by friends who love gaming and grubbing. It’s not just all about the mac and cheese when it comes to what we are offering. Our chefs’ cool combos are all about different flavors to smash the pallet. The Spicy Mario which has Spicy Tomato Cream Sauce, Penne pasta and Parmesan is a crowd favorite. Chef Recommends adding chicken. In addition to chicken, we offer steak and shrimp on any of our mac and cheeses. Our Daisy Mac is a great mac and cheese option for vegetarians.
Protein and Poke Protein and Poke is all about Healthy ways to refuel after you work out or just do not want to feel bloated after a meal. Our protein bowls have been designed by our chef to create a fresh healthy option for your lunch or dinner. We have combined the protein and poke bowl concept to make it easier for the family or office to order from one place. Don’t eat meat or fish? We can make a vegetarian bowl for you no problem. Chef Favorite is the Hawaiian Tuna Poke Bowl Ahi Tuna, Sushi Rice, Seaweed Salad, Scallions, Sesame Seeds, Nori Ponzu Poke Sauce, Sriracha Aioli.
